This 50% Iberian Breed Cebo de Campo Ibérico Paleta comes from Iberian pigs with 50% racial purity, raised in semi-freedom in the dehesa and fed with a combination of natural pastures and cereals. This open-range rearing system is directly reflected in the quality of the meat: aromatic fat well-marbled into the lean meat and a distinctly Iberian flavor.
With a minimum curing period of 24 months, the piece develops a smooth texture and a persistent, balanced aftertaste, the result of slow maturation that respects the product's natural times. The 2021 vintage benefited from favorable weather conditions for pastures, which translates into optimal fat marbling and a well-rounded organoleptic profile.
Available as a whole piece weighing between 5 and 5.5 kg, with the option of machine slicing for easy enjoyment at home. To get the most out of it, it is recommended to temper the piece a few hours before serving and consume it at a temperature between 18 and 20 °C.
Ideal for an Iberian cold cuts board, for sharing at gatherings, or as a high-quality gourmet gift.
Store in a cool, dry place away from direct sunlight. Shelf life of up to 12 months for a whole piece. Once sliced or opened, keep refrigerated and consume within a few weeks.
