Traditional curing

This ham shoulder has undergone a slow and controlled curing process for a minimum of 36 months. This time allows the product to develop its aroma, concentrate its flavor, and achieve a balanced texture.

Once it reaches its optimal point, the piece is sliced and vacuum-packed to preserve its qualities until consumption.

Consumption recommendations

To enjoy it at its ideal point, it is recommended to take the packet out of the refrigerator a few minutes before consumption and leave it at room temperature, approximately between 18 ºC and 20 ºC.

When the fat begins to look shiny, the slices separate better and release their full aroma. The sealed packet can also be run under warm water for a few seconds to speed up tempering.
